Introduction
Welcome to the curriculum area of the website. You can use the materials here to teach a food safety workshop to child care providers.
This project was developed by New Mexico State University Cooperative Extension Service. Focus groups with Spanish-speaking child care providers were conducted to ensure that pertinent issues were addressed and that situations would be presented accurately. The materials can also be used with providers who do not speak Spanish.
The curriculum focuses on the four areas of the Fight BAC!® campaign: keeping hands and surfaces clean, preventing cross-contamination, cooking foods to proper temperatures, and chilling foods promptly. Proper techniques for diapering and safe handling of bottles and baby food are also addressed. After attending the workshop, participants will be able to apply these principles in their home child care environments.
